Steel-Cut Oat Pilaf

In this dish, oats are a great alternative to rice and it’s a foundation dish that you can dress up in many ways.


3 Tbsp  Highwood Crossing Organic Canola Oil
1 cup  Highwood Crossing Organic Steel-Cut Oats
2  cloves garlic
1 Tbsp  parsley, minced
1 tsp  fresh thyme
1/2 tsp  fresh marjoram
1 3/4 cup  chicken or vegetable stock
1  small onion, diced
1  celery, minced
1  carrot, diced
1  tablespoon tamari or soy sauce
salt and pepper to taste


Sauté oats in oil until they are lightly browned. Add garlic and herbs, onion, carrot and celery. Add stock, tamari, salt and pepper. Lower heat, simmer, covered for 20 minutes or until stock has been absorbed and the oats are just tender. Remove from heat and let steam covered, for 10 minutes.


Fluff with a fork and serve. Makes approximately 4 servings.
