Sourdough Cornbread

RECIPE DETAILS

Dry ingredients – mix well in large bowl:

¼ cup  sugar
1 cup  Highwood Crossing Unbleached All-Purpose Flour
½ cup  cornmeal
2 tsp  baking powder
½ tsp  baking soda
½ tsp  salt

Liquid Ingredients – whisk together well, then add to dry ingredients and mix well:

¼ cup+2 Tbsp Highwood Crossing Organic Canola Oil
2  eggs
½ cup  buttermilk or add a bit more at a time if batter is too stiff
1 tsp  vanilla
100 g  sourdough (spent or levain made the night before)

Grease 8 x 8 pan with oil or cooking spray. Pour batter into pan.


Bake at 375 F 25 minutes or 375 convection 20 minutes.
