Power Grain Salad

RECIPE DETAILS

A hearty whole grain salad with a sweet citrus dressing makes this a great year-round dish and an easy potluck item.


1/2 cup  Highwood Crossing Organic Power Grain Cereal, uncooked
1 cup  celery, thinly sliced
1/3 cup  dried cranberries
1/3 cup  raisins
1/3 cup  fresh parsley, coarsely chopped
1/2 cup  pumpkin seeds, shelled, raw and unsalted
2 Tbsp  shallots, minced


Dressing:
1/4 cup  Highwood Crossing Organic Cold Pressed Flax Oil
1 Tbsp  white wine or apple cider vinegar
2 Tbsp  orange juice
1 Tbsp  orange zest
pinch  salt and freshly ground black pepper


Place the power grains in a medium size saucepan and add 1 1/2 cups of cold water.


Bring to a boil over high heat. Reduce the heat to low and let simmer, uncovered for 25 minutes. Let cool.


In a medium sized bowl mix celery, cranberries, raisins, parsley, pumpkin seeds and shallots with the flax oil vinegar, orange juice and orange zest.


Add cooled power grains to the salad and season with salt and pepper.
