Ian’s Scottish Oat Cakes

RECIPE DETAILS

A crisp cookie for breakfast, lunch or as a snack. Top with cheese, jam or honey.


2 cups  Highwood Crossing Organic Quick Oat Flakes
1 cup  Highwood Crossing Organic Whole Wheat Flour
1 Tbsp  sugar
1 tsp  salt
1/4 cup  Highwood Crossing Organic Canola Oil
1/4 cup  butter, melted
1/2 cup  boiling water
1/2 tsp  baking soda


Mix oats, flour, sugar and salt.


Mix baking soda in boiling water and pour into dry ingredients. Add oil and butter and mix well.


Put mixture onto an ungreased baking sheet and pat with your hands until flat, about ¼” thick. Score into squares and cut apart while warm along score lines.


Bake in 350°F oven for 20-30 minutes depending on thickness of squares.


Makes approximately 20 - 2” squares or 48 - 1 ½ “x 1 ½”.
