Farm Style Pancakes or Waffles

1 cup  milk or milk substitute
1  egg
1 tbsp  Highwood Crossing Organic Canola Oil
1 cup  Highwood Crossing Organic Muffin and Pancake Mix


Heat griddle or waffle iron on high to 400°F. Combine milk (or milk substitute), egg, and canola oil. Add wet ingredients to dry mix and stir quickly until smooth. Do not over mix. Spoon or pour batter onto a lightly oiled grill. Turn pancakes when bubbles form on the top.


Makes about 12 pancakes.


Muffin and Pancake Mix can be substituted with our Pancake and Waffle Mix.

Highwood Crossing Muffin and Pancake Mix

1 cup mix approx. 175 g = 10 to 12 3-4” pancakes.
1 kg pkg = 6 cups to yield approx. 60 – 72 pancakes depending on the size.
10 kg pkg yields approx. 600 pancakes of the 3-4 “size. Best to aim for 400 as size can fluctuate.
6 cups Mix = 60 pancakes (1.5 L milk, 6 eggs, 90 ml canola oil)
12 cups Mix = 120 pancakes (3 L milk, 12 eggs, 180 ml canola oil)
18 cups Mix = 180 pancakes (4 L milk, 18 eggs, 270 ml canola oil)
24 cups Mix = 240 pancakes (6 L milk, 24 eggs, 360 ml canola oil)
30 cups Mix = 300 pancakes (7 L milk, 30 eggs, 450 ml canola oil)
36 cups Mix = 360 pancakes (9 L milk, 36 eggs, 540 ml canola oil)
