Classic Oatmeal Cookies

A popular, easy, and all-around snack made healthier to enjoy at home or on the road.


1/3 cup  butter, softened
1/4 cup  Highwood Crossing Organic Canola Oil
3/4 cup  brown sugar

1 Tbsp  molasses
1  egg
1 tsp  vanilla
1/4 tsp  cinnamon
1 cup  Highwood Crossing Organic Rolled Oat Flakes
1 1/4 cup  Highwood Crossing Organic Muffin and Pancake Mix OR 1 cup

Highwood Crossing Unbleached All-Purpose Flour

½ tsp   salt
1/4 cup  Highwood Crossing Organic Flax Seed, ground*
1 cup  raisins or chocolate chips or pecans or mixture

*2 Tbsp of seeds grind up to the 1/4 cup of ground flax seed required for this recipe.


In a bowl combine the butter, oil, brown sugar, egg and vanilla. In another bowl combine the cinnamon, rolled oats, muffin mix and flax seed.


Add the wet mixture to the dry mixture and mix. Stir in the raisins/chocolate chips/pecans.


Spoon batter onto greased cookie sheet and bake at 375ºF for 10 minutes.


Makes about 18 cookies. We like to use a small ice cream scoop to measure the cookie dough = cookies that are close in size and great for gifts.


Variation: Try adding ¼ tsp. cloves, ½ tsp. nutmeg and ½ cup raisins and ½ cup walnuts for a hermit cookie.
