Classic Muffin Recipe

RECIPE DETAILS

1 1/4 cup  milk, buttermilk, soy milk, or fruit juice
1/4 cup  Highwood Crossing Organic Canola Oil
1/2 cup  honey or brown sugar
1  egg, beaten
1 tsp  vanilla
1 - 1 1/2 cups berries, fruit, nuts or combination
2 cups  Highwood Crossing Organic Muffin and Pancake Mix


Combine first 5 ingredients in a bowl. Toss fruit/nuts with dry mix, then combine and blend all ingredients just until moist. Bake at 400°F for 20 minutes in greased or lined muffin tins. Makes approximately 12 muffins.


Muffin and Pancake Mix can be substituted with our Muffin Mix.


Makes approximately 12 muffins.
