Calgary Stampede “Haystack” Cookies

RECIPE DETAILS

1 ½ cups  mashed banana
1  egg white
1 tsp  vanilla
¼ cup  Highwood Crossing Organic Cold Pressed Canola Oil
1 ½ cups Highwood Crossing Organic Rolled Oat Flakes
½ cup   Highwood Crossing Organic Flax Seed, ground
1 tsp  baking powder
½ tsp  cinnamon
½ tsp  salt
1 cup mini chocolate chips
1 ½ cups long shredded coconut


Mix ingredients together and drop batter by 1 tbsp. onto parchment lined
cookie sheets. Bake @ 350°F convection oven for 15 minutes. 


Makes 30 -36.
